    I would also look at their reputation with customers and clients. I would observe the types of products or services they sell.

    they did go too far and were inept if you observed all that. That being said, paranoia is fairly common for stores like that where they have many high value items that also happen to be very small and easy to conceal. It is odd that they would bother having an undercover follow you out when they clearly post a "service representative" at the door to "help" any customers that need it. That may have just been some fool with a blue tooth.
